Garden Restaurants can be started within the hotel, This can provide pleasing feeling for the customers and also it can be great profit to the hotel managements by attracting more people for a non AC restaurant. This could be a awareness on our planet earth, a green planet.

I have often thought of an Earthship restaurant with U Modules for growing vegetables and aquaculture, and rabbits and hens, and exterior seasonal grain and fruit areas with pastureland and fallowed fields. Solar ovens and compost toilets, with a large rainwater catchment and recycling system. U Module suites that could be closed at night with privacy walls and doors and insulated steel shutters. All for the workers and paying guests. Total self sufficiency, with solar and wind power and hot water.
In the book, Earthship 1, there are pictures of such a concept (in apartment form) going up a south facing hill.
